Tasting the Catalonian cuisine.
The night before we left, Swamini and her family cooked us genuine Catalonian
cuisine ( a meditteranean cuisne of Catalonia region in Spain). Let's have a look
at the menu.
Top: "Esacaliva" Grilled vegetables from the oven with egg plant, red pepper,
onions and tomatoes, seasoned with salt and olive oil. Most suitable for yoga
vegetarians.
Bottom: Pa amb tomàquet, rubbing tomato & garlic on toast, then add salt
& olive oil. As the ingredients are rubbed on, not chopped and placed on
top, the taste will not be too strong, but still smells good and delicious!
Top: Spinach a la Catalan Spinach cooked with raisins and apples, very unique
taste, the freshness of vegetables combined with a sweet taste.
Bottom: A vegtable salad tailor made for Master Dickson, with plenty of raw
vegetables, fruits and nuts (Swamini offered us plenty of different nuts to
choose from, walnuts, almonds, cashew nutes, pinenuts, sunflower seeds etc), to
go with lemon juice, olive oil and balsamic vinegar. Very rich ingredients, just
this salad and we were almost half full.
Top: Tortilla de Patata - And of course the famous Spanish potato salad, let's
see how it is made.
Bottom: First stir fry the potatoes and onions.
Top: Add 3-4 battered eggs, put in frying pan, and fry one side first.
Bottom: Cover the pan with a plate, turn over.
Top: Put back in pan and fry the other side and that's it!
Bottom: Is it good? The truth is, we were already very full and had just tried a
little of this famous dish......what a pity!
Yoga tea - This is not Spanish tea. Swamini learnt to make this tea while she
was in India. Ingredients include cinnamon, ginger, indian herbs, black tea
loose leaf and soya milk. This tea is the best, very soothing to the mind and
best after a heavy meal for detox. We are now experimenting with this tea and
will bring it to the Dickson Yoga Vegetarian Bar. Look out for it!
